Today is World Vegetarian Day. Even if you're NOT a vegetarian, meatless dishes can be a way to make your food budget stretch and add variety to your family's menu.
This recipe for Sweet Potato and Black Bean Enchiladas fits the bill for today, whether you're celebrating World Vegetarian Day or Meatless Monday. I like this recipe, and have made it before. When I make it again, I'll mash the black beans and sweet potatoes together a bit so the filling sticks together a bit more.
HINT: If you don't have enchilada sauce, you can substitute one 15-ounce can of unseasoned tomato sauce mixed with 2 or 3 tablespoons of taco seasoning.
