Karen's Krazy Kracker Kookies (October)

Karen’s Krazy Kracker Kookies
[20 minutes start to finish]

2 sticks for butter [Land-o-Lakes (light salt) works best]
½ cup Sugar [Domino Sugar works best]
1 Teaspoon Vanilla
Saltine Crackers
12 oz package Milk Chocolate Chips
1 cup Pistachio Nuts [any salty nut will work]


Line 10” by 15” high lip cookie sheet with Aluminum foil 
Arrange Saltine crackers on cookie sheet (cut crackers to fill in gaps)
Bring to FULL boil (for two minutes) - 2 sticks butter and ½ cup sugar
Remove from heat and stir in Vanilla
Pour mixture over crackers
Bake @ 350 degrees for 10 minutes
Realign crackers which have floated out of position
Sprinkle Milk Choc. Chips over top and spread when melted
Sprinkle nut over top and press down into warm chocolate
Allow to cool before refrigerating overnight
Peel foil off and crack into odd shapes
[Kookie Best Served Kool -- Kookie will get gummy if warm]
