EZ Cheesey Soup (October)

1 Tbs Butter
1 Small Onion, finely chopped
Place in 2 qt microwave safe casserole. Cover, cook 1 1/2 minutes on high.

1 coarsely shredded carrot
3/4 cup frozen chopped broccoli
3/4 cup frozen whole kernel corn
1/4 cup water Cover.

Microwave 5 minutes. Stir in:
1 can (10.5 oz) can Condensed Cream of Potato Soup
1 soup can Milk
1/4 cup Shredded Cheddar Cheese
1/4 cup Shredded Mozzarella Cheese Cover.
Microwave on high for 3 to 5 minutes, or till cheeses start to melt.
Stir in: 1 (10.5 oz) can Baby Clams, drained and rinsed. (Optional)
Season with Salt and Freshly Ground Black Pepper to taste Serve with a Tossed Green Salad and some Crusty Rolls

Makes 2 hearty servings or 4 side servings
