Egg Nog Bites

Bottom Layer:
12 oz semisweet chocolate (chips, chunks or pieces)
1/4 cup butter or margarine
2.5 cups cinnamon graham cracker crumbs
14 oz sweetened condensed milk
1 tsp vanilla extract
Middle Layer:
8 ounces bittersweet chocolate broken into pieces
2 tablespoons butter
1 cup heavy whipping cream
Top Layer:
1 envelope unflavored gelatin
1/4 cup water
8 oz cream cheese softened
1/2 cup sugar
1/2 tsp cinnamon
3/4 cup egg nog
1 cup heavy whipping cream
48 chocolate chips (any kind, but white and chocolate swirled preferred for desired look)

Cook Time: Approximately 45 minutes
Yield: 48 bites
• Line a mini cupcake tin with cupcake foils or papers
• Begin with Bottom Layer
• Crush graham crackers until 2.5 cups fine crumbs, put in bowl and set aside
• Using a double boiler, melt chocolate and butter together until smooth
• Mix vanilla into condensed milk and stir into graham cracker crumbs until all are moist
• Stir chocolate mixture into graham cracker mixture until well mixed
• Fill each cupcake liner 1/3 way full with chocolate mixture and pat evenly
• Leave at room temperature while working on middle layer
• Next begin Middle Layer
• Place broken bittersweet chocolate and butter into bowl
• Heat 1 cup heavy whipping cream slowly until boiling, stirring often
• Pour cream over chocolate and butter and stir until completely smooth
• Using a small spoon, spoon a thin layer over bottom layer in cupcake liner (just enough to cover bottom layer)
• Chill 10-15 minutes or until set
• Finally start Top Layer
• In small saucepan on low heat dissolve gelatin in ¼ cup water
• Mix together cinnamon and sugar
• With mixer, cream together sugar mixture with cream cheese
• Add dissolved gelatin/water and egg nog and mix on medium speed until smooth
• Chill while whipping cream
• Take 1 cup heavy whipping cream and mix on high speed until achieve whipped cream consistency
• Fold into eggnog mixture and fill cupcake liners to the top
• Place a chocolate chip on the top of each Egg Nog Bite
• Serve immediately or chill until serving
• Let stand 5 minutes at room temperature before serving
